HOMEMADE VEGGIE PIZZA


I was in one of those moods to make a pizza.  Sometimes making food yourself tastes so much better than ordering out.  And I found a recipe that I will definitely be using again and again.  And I'd like to share it with you!



There are some recipes where I feel like you need to measure everything to make sure it is accurate and cooks correctly.  This is not one of those recipes.  In fact, I think it is fool-proof because you can literally add more or less of anything.  Or even add completely different ingredients if you wish as well.   This is one of my concocting recipes, where I just scoop a little bit of this, add a dash of this, taste, and modify if necessary.  Sometimes these are my favorite types of recipes.

My dad and I headed to this little farmer's market stand (All Good Organics) in Centerville and picked up some yummy spinach, broccoli, sweet peppers, cucumbers, and the best cherry tomatoes I have ever had.  Not even joking!  I always love shopping at these kinds of local farms because not only is it delicious and healthy, but it's helping to support local businesses!

Ok now on to the actual pizza itself.  I wanted to try a white sauce pizza but without the thick, heavy cream sauce.  Instead I used ricotta cheese.  Mixed with a little garlic, and it tasted sooooo good!

INGREDIENTS:
Remember you can pick any type of veggies to put on this pizza.  Pick what you like :)

Pizza dough.  I used one of those pillsbury pizza doughs because I'm lazy, but I think it would be lovely with homemade crust too.  Maybe next time...

Ricotta cheese.

Garlic.  You can use fresh garlic, garlic in a tube, or even powdered garlic.  Whatever you prefer/have on hand.  I still had some leftover garlic in a tube from when I made garlic pasta, so I decided to use that, but the other methods would work just as well I think.

Veggies.  I used baby spinach leaves, cherry tomatoes, mushrooms, and sweet peppers.

Mozzarella.

Parmesan. To sprinkle on top when it comes hot out of the oven.

DIRECTIONS: 

1. Preheat the oven to however the instructions say for the pizza dough.  Around 400 degrees F.
2. Place the dough on a greased pan.
3.  In a bowl, mix together a cup of ricotta cheese and a tbsp of garlic.  Taste and add more of either one depending on how garlicky you like your pizza.
4.  Spread the ricotta cheese/garlic mixture onto the pizza dough.
5. Add your toppings!  In my case spinach, cherry tomatoes, mushrooms, and sweet peppers,
6.  Add the mozzarella cheese on top.
7.  Bake in the oven for however long the directions for the dough says.  About 20 minutes.
8.  Once the pizza is done, take it out of the oven, and sprinkle with parmesan all over!


Pizza is in the oven!


And voila!  Pizza is done.  That's all!  And it's also delicious.
