Ice Sculptures | Out and About

Today was the perfect winter day: sunny and not too cold to enjoy the indoors.  After a long drive home from visiting my boyfriend, my mom, dad, and I decided to go to the Ice Sculptures at the Minnesota State Fairgrounds.  It was really cool to see all of the sculptures and I couldn't actually believe that all of them were actually made of ice; they were so good!







 Had a good day, except when we were walking back to the car, I slipped on the ice and landed right on my hip bone.  Currently icing my hip as I write.  Hope you all have a great week!

This Week's To-Dos

I thought instead of writing a physical to-do list this week, I would write them down in the blog post so that I am made accountable to get all the things done.  Keep me accountable, guys haha!


  • Contact the gym to set-up free trial.
  • Actually, go to said gym at least 3 times this week.
  • Look on Pinterest for recipes.
  • Make meal plan for the week.
  • Go grocery shopping for ingredients for meals from the meal plan.
  • Shave legs (lol)
  • Figure out what I want for my birthday, so I have an answer when ask me what I want for my birthday.
  • Figure out what I want to do for my birthday.
  • Tidy my room. (i.e. put clothes away, throw trash out, go through closet and find clothes to donate, etc etc)
  • Finish watching West World (priorities amiright?!)
  • Find jobs that I want to apply to.
  • Research places that would be fun to move to.
  • Figure out what I want to do with my life.
  • Drink water.
  • Put gas in my car so I have enough to go to Duluth this weekend ;)
  • Go to Duluth to see someone...
  • Film video.
  • Edit video.
  • Upload video.
  • Paint my nails.
  • Write a couple of blog posts I have ideas for.
  • Write this blog post.

Monster M & M Cookies

Hey y'all -

My mom wanted me to make some monster cookies and so I went on the hunt to find a deliciously, easy recipe.  If you're unfamiliar, monster cookies are essentially oats, peanut butter, chocolate chips, and M&M candies.  YUM.  I ended up finding this recipe from Chef Saavy, and they looked freakin' delish!



The recipe and instructions are as follows:

INGREDIENTS
½ cup unsalted butter, softened
1 cup light brown sugar
½ cup creamy peanut butter
1 teaspoon vanilla extract
1 whole egg
¾ cup all purpose flour
¼ teaspoon salt
1 teaspoon baking soda
1½ cups old fashioned oats
1 cup M & M's
½ cup semi-sweet chocolate chips

INSTRUCTIONS
Preheat oven to 350 degrees.
Cream butter and sugar until light and fluffy (with mixer or by hand works too.)
Add in peanut butter and mix.
Add in vanilla and egg. Mix until combined.
Combine flour, salt and baking soda in a small bowl.
Add the dry ingredients to the batter in two parts.  But do not over mix!
Fold in old fashioned oats, M & M's and chocolate chips.
Portion dough into 16-18 cookies and place on a baking sheet.
Bake cookies for 11-13 minutes or until lightly golden brown and firm on the edges.
Remove from the oven and let set for 3-4 minutes.



Literally so easy and tasty.  I highly recommend you make these cookies if you are looking for something to indulge your sweet tooth!

A LOOK AT | The Body Shop Argan Oil Collection

As you may or may not know, I have a serious love of products that have oil in them.  Not only are they super hydrating but I think they make a serious difference in the overall texture and health of my hair/body.  For Christmas, I was (kindly) gifted the new The Body Shop Argan Oil Collection and I would like to share it with you today.




This collection comes in a beautiful turquiose box with a golden bow and makes it very exciting to open.  Once sliding the bow off and opening the box, you are met with The Body Shop Wild Argan Oil shower gel, body butter, exfoliating gel body scrub, soap, and a miniature loofa.  SO many goodies!



Although argan oil is not my favorite scent, the smell is pleasant enough to use.  All of the products come in a nice sample size which would be perfect for any type of traveling.  The shower gel reminds me of a honey, but more oil-y (if that makes sense?)  The body butter has a really lovely butter-y consistency and just absorbs into the skin without leaving any sticky residue.  The exfoliating gel body scrub is such an interesting product.  I have never tried a gel body scrub before, and honestly on first touching it, it feels very gel-like.  But once you rub it on your skin, you can definitely notice the exfoliating part of the scrub.  I think it will be nice to use on my legs and arms in the shower.  I have yet to try the soap as I normally don't use soap, but it comes wrapped in a nice papery packaging and I'm excited to try it.  Last but not least, is a tiny, white shower loofa.  I think that this loofa is so cute and would be perfect for traveling (as it so small).

Mall of America Adventure

We had the day off of work for New Year's  and decided to go to the Mall of America for a fun family day.  As a lot of people had it off, it got very busy in the afternoon.

 All of the pretty Christmas lights were still up this day!

There was a really cool thing at the Microsoft store where you could try their VR machine.  This is my sister trying it out.  

We also stopped by the glasses shop where we looked at some glasses.  I don't need glasses for seeing (yet), but might get some to prevent eye strain from excessive computer use.  How do they look?? ;)

Tired Thoughts


You know when you just have so much on your mind that you can't fall asleep, but at the same time you are so tired and could fall asleep at anytime?  This is me right now.  So I thought I would write some thoughts down for you today.  Kind of like a stream of consciousness.

How has your day been?  Mine has been crazy busy.  Like literally I barely sat down for 5 minutes before I had to run around again.  I suppose it's better than sitting on my as  all day.  As far as my new job goes, I am enjoying it so far.  it is a lot to remember and there is a lot of responsibility, so a lot of pressure to make sure you do the right thing all the time.  It's kind of exhausting.  Sometime I just want to turn my brain off.  Anyways, we went to the Mall of America yesterday.  It was a lot of fun, but it got very busy later on in the day.  I got a beauty blender, new eyeliner from NYX, and a lotion from Bath and Body Works.  Successful haul!  I also dropped a pan on my foot a couple of days ago, and my foot is still bruised.  Hopefully it gets better soon because it actually hurts.  So about that election...heh heh heh just kidding I don't want to talk about it.  You know what's really good, potatoes.  I could literally eat potatoes everyday, in any way.  Speaking of food, I am ~trying~ very hard to actually stay on a healthy diet plan.  More fruits and vegetables, less refined food and sugars.  Also I'm making an effort to work out 4-5 times a week.  I had actually been doing 3-4 times a week but then the 2 weeks before/after Christmas happened and practically no exercise was done then.  So I am going to start from square one again and work up my endurance.  So yeah that's what I'm doing.  Ya know "new year, new me" thing.  I have been watching season 8 of Castle with my mom (she got the DVD set for Christmas) and I am so sad that it's over!  Castle has been one of my favorite shows EVER and I wish there were more shows like it.  Speaking of that, there are so many crap tv shows on tv now.  Like there is literally nothing to watch.  Do you have any suggestions for good tv shows to watch?  Hook a girl up please.  I'm currently eating a piece of Dove chocolate; the kind with the caramel filling, and it is SO delicious.  Also, what did we do to deserve dogs?  Like they are so precious.  I watched a video compilation of dogs doing funny things and it made my heart burst.  I want ALL THE DOGS.  Ok I'm starting to get tired now and I have to get up early tomorrow to HIT THE GYM.  Oh yeah, check me out.  Jk I'm headed to bed.  Night guys.

Buying My First Car (Tips + Advice)




So I recently just did my first adult purchase...I bought a car!  With my own money!  All by myself!  As you can tell I am quite pleased with myself.  Buying a car is obviously a very important and (expensive) purchase, so today I thought I would give some tips and advice on buying your first car!

Establish a realistic budget
I know we all would love to have those fancy, expensive sports cars, but for most of us, that is a bit unrealistic.  It is important to establish a realistic budget of how much you want to pay.  Although paying cash for your car is ideal, it is more common to have some sort of loan/financing through the dealership or bank.  Remember when coming up with a realistic budget should include things such as insurance, gas, and maintenance.

Wants vs Needs
For a first-time car, do you need to have all the bells and whistles?  Probably not.  And this can probably save you a lot of money.  Of course I want a GPS/entertainment system and a heated steering wheel, but those were things that I decided were "wants", and it ultimately saved me quite a lot of money on the car that I ended up going with.

Do your research
Do.Your. Research.  I can't say this enough.  Read reviews, check out Edmunds.com, it's never been easier with the Internet.  Read what actual owners of the vehicles say about them, and then weigh the pros and cons.  I also recommend looking at models that are around the years that you want.  You might find that there are differences in the models from year to year.

How much do you want to spend?
This is obviously almost self-explanatory that I probably don't even need to say it, but: how much do you want to spend?  How much do you feel comfortable spending?  You don't want to spend the rest of your life living paycheck to paycheck to pay for your car.  Make sure to negotiate with the car dealership and see if you can get a better price. Also look up a vehicle's market value on KBB.com (Kelley Blue Book) to see if you are getting a fair price.

Know your financing options
Like I mentioned previously, most people need some sort of financing option in order to purchase a vehicle.  This depends greatly on your credit score, and if you have insufficient credit history, you might need a co-signer on a loan or get a cheaper car.  Check with your bank or credit union to see if they offer competitive interest rates on loans to compare with the dealership loan options.

THREE


Can you actually believe it's been THREE years since I started Emskeeso?!?!  It seems like just yesterday I was writing about the first year of this blog.  I am very proud of how far this little blog has come this past year, and I am excited to see where it will go in the future.  I have enjoyed it so much and I am forever grateful to have this little space on the internet to share my life and experiences with all my wonderful internet friends.
